Rigatoni Bolognese is a meaty homemade sauce slow-simmered to perfection, then tossed with rigatoni. This Italian-inspired dish is hearty and rich–perfect for a cozy night in.
Cook ground beef and pork. Once the meat has browned, set aside. Add pancetta and cook until crispy, then cook soffritto. Add wine and cook until reduced.
Add bay leaf, milk, cream, nutmeg, parmesan rind, thyme sprigs, and chicken stock to a low simmer. Cook uncovered for 2 hours, stirring every 25 minutes.
Add cooked rigatoni to the bolognese along with ¼ cup reserved pasta water. Stir to combine. Serve and top with freshly grated parmesan and a grind of black pepper.
