Make marinated olives. Add olives, olive oil, lemon peel, thyme, fennel seeds, rosemary & salt to a small saucepan and mix well. Simmer for 4 minutes, until fragrant. Set aside to cool.
Make whipped feta. Add feta, cream cheese and lemon juice all ingredients to a blender and blend until smooth.
Plate and top with marinated olives. Spoon smooth and creamy whipped feta into a serving bowl. Top with marinated olives–including infused olive oil– and discard lemon peel.
