Creamy Mushroom Soup

This hearty creamy mushroom soup is made with mushrooms, thyme, onion, broth, and cream. It's easy to make, comforting and much better than the canned version!


– Butter + Olive Oil – Onions  – Mushrooms – Thyme + Dill – Smoked Paprika – White Wine – Soy Sauce – Veg. Broth – Flour – Whole Milk – Salt + Pepper – Lemon Juice – Parsley – Sour Cream

Melt the butter in a dutch oven over medium heat, then add olive oil. Sauté onions until translucent.

1. Sauté 

Add cremini mushrooms and cook for 3 minutes. Add thyme, dill, and smoked paprika and cook for 1 minute.

2. Add Mushrooms 

Add white wine and cook until liquid has reduced by about half. Add soy sauce and broth and bring to a boil. Lower heat to a simmer and cook for 15 mins.

3. Add Liquids 

Add milk and flour to a bowl & whisk until well combined. Pour into soup and stir to combine. Cook for another 15 minutes, stirring occasionally.

4. Add Milk & Flour 

Add salt, pepper, lemon juice, parsley and sour cream. Stir to combine.

5. Final Touches

Ladle into bowls and serve. Garnish with sour cream and toasted baguette.
