Air Fryer Potato Wedges


These might be the best air fryer potato wedges you’ll ever make! Prepared in an air fryer & finished with a ginger scallion sauce. Crispy, perfectly seasoned and great as a main or side dish.


– Yukon Gold Potatoes – Kosher Salt – Garlic Powder – Scallions – Ginger – Garlic – Kosher Salt – Avocado Oil + Spray

Air Fryer Potato Wedges

Preheat air fryer to 380°F. Cut potatoes into quarters. Soak in water for 10-15 minutes.

1. Soak Potatoes

Drain water & pat potatoes dry with a paper towel. Spray potatoes with avocado oil spray & season generously with kosher salt and garlic powder.

2. Season Potatoes

Add potatoes to air fryer basket. Select "French Fries" setting, adjust time to 28 minutes (380°F) and press "Start". Shake air fryer basket at the 14 minute mark.

3. Cook Potatoes

Start working on the sauce while the potatoes are cooking. Add chopped scallions, ginger, garlic, and kosher salt to a medium-sized mixing bowl.

4. Ginger Scallion Sauce

Heat oil in a saucepan until temperature reaches 350°F. Carefully pour over ginger scallion ingredients. Sizzling will occur, that's okay. 

5. Heat Oil & Add to Ingredients

Leave the oil to cool to room temperature. Potato wedges should be ready!

6. Leave to Cool

When ready, remove golden, crispy wedges from air fryer, and into a mixing bowl.

7. Remove Wedges 

Add 2-3 tablespoons of ginger scallion sauce to the bowl and mix well. Enjoy! 

8. Toss Wedges in Sauce
