This easy Caesar salad recipe is crisp lettuce tossed in a zesty homemade salad dressing topped with buttery bits of focaccia breadcrumbs. Great as a side or main if you're keeping it light.
Make a paste. In a mortar and pestle, add anchovies, smashed garlic, and a pinch of kosher salt. Pound the mixture to break up the garlic a bit, then grind until a paste forms.
Make the dressing. Transfer anchovy paste to a medium-size bowl. Add the egg yolk, lemon zest & juice, dijon mustard, and a generous pinch of salt. Whisk together.
Make the dressing. Combine avocado and olive oil in a measuring cup. While whisking, slowly add oil until it is fully emulsified.Do not stop whisking as you add the oil.
Make breadcrumbs. In a skillet over medium heat, add butter. Once melted, add grated garlic and cook until fragrant. Add breadcrumbs and cook for 2-3 mins.
Assemble. Add little gem leaves to a bowl then add desired amount of dressing, parm, black pepper, salt. Toss, transfer to a plate, then top with more parm, breadcrumbs and pepper. Enjoy!
