Crab Soup with Shiitake and Napa Cabbage
Crab soup has a rich broth brimming with fresh crab meat, shiitake mushroom, and napa cabbage accented with sesame oil, ginger, and sake. Warm up with a bowl of this delicious comfort food.
– Chicken Wings
– Sesame oil
– Shiitake mushrooms
– Napa cabbage
– Soy sauce
– King crab
– Potato starch
– White pepper
Add chicken, scallions, ginger coins, garlic, peppercorns to a pot and bring to a boil. Lower to a simmer, cover and cook 1 hour.
1. Make the stock
Carefully strain the broth and reserve liquid for soup.
Continue with aromatics.
2. Strain and reserve
Add sesame oil to a dutch oven over medium-high heat. Once oil is hot, add scallions, ginger, and garlic. Sauté scallions, ginger, and garlic.
3. Sauté aromatics
Add shiitake and napa bottoms, cook until cooked through. Add sake, then chicken stock. Bring mixture to a boil and cook for 15 minutes over medium heat.

Add crab and season to taste with kosher salt. Stir in potato starch slurry. Cook for another 3 minutes or until soup has slightly thickened.
Serve immediately in bowls and top with white pepper just before serving. Enjoy!
