Butter Pecan Ice Cream Sandwiches


Butter pecan ice cream sandwiches are a frozen handheld treat of ice cream dotted with toasted pecans, encased in a cookie crumb crust. Enjoy this dessert year-round as a tasty way to cool down .


Chopped pecans Unsalted butter  Sugar  Salt  Pepperidge Farm Butter Pecan cookies Unsalted butter  Heavy cream  Pure vanilla extract 

Step 1

Make candied pecans. Add butter, both sugars, salt and stir to combine then add pecans. Keep a continuous until pecans are coated in glaze and give off a toasted smell.

Make cookie sandwich. Place cookies in the food processor. Transfer the mixture to a mixing bowl. Next, melt the butter then pour it over the cookie crumbs. Mix well.

Make cookie sandwich. Pour half of the mixture into a parchment paper-lined baking pan. Use the bottom of a cup to reinforce the cookie into the pan.Transfer to the freezer.

Make ice cream. Once melted, the butter will foam a little bit. Carefully swirl the pan. Transfer browned butter to the sweetened condensed milk bowl and stir.

Make ice cream. Add very cold heavy cream to the mixing bowl and whisk on high speed until the cream turns into stiff peaks. Add sweetened base and fold until well-mixed.

Add layers and freeze. Add the ice cream mixture.  remaining ½ cookie crust; spreading it evenly. Freeze for at least 7 hours, best if overnight.
