This easy to make brown butter sage butternut squash side dish is a lovely balance of sweet and savory thanks to the addition of nutty brown butter and parmesan curls.

-Butternut Squash -Unsalted Butter -Fresh Sage -Freshly Grated Parmesan -Kosher Salt -Freshly Cracked Black Pepper

Simple Ingredients

Peel butternut squash, cut down the middle lengthwise and spoon out the seeds and slice into ½ inch thick slices.

Step 1

Drizzle avocado oil over squash, then season with kosher salt and pepper, then place on a baking sheet.

Step 2

Place in oven and cook for 20 minutes or until browned and tender.

Step 3

Melt butter in a saucepan, add sage. Keep a consistent swirl of the pan. Once a nutty aroma forms, remove from heat.

Step 4

Once squash is roasted, place on a serving plate. Spoon brown butter sage sauce over butternut squash. Top with freshly grated parmesan. Done!
