Filipino Rice Porridge
Arroz Caldo is a Filipino chicken and rice porridge made of rice, chicken, garlic, and ginger. This classic comfort food is topped with scallions, crispy garlic, hard boiled eggs & squeeze of citrus.
–Ghee or Avocado Oil – Garlic – Ginger – Chicken Thigh; Skinless, Bone-in – Fish Sauce – Kosher Salt – Glutinous Rice – Jasmine Rice – Chicken Broth – Freshly Cracked Black Pepper
Add 2 tablespoons ghee to a dutch oven over med-high heat and add half of garlic. Sauté until golden brown. Remove from dutch oven, set aside.
1. Make Garlic Chips
Add remaining 1 tablespoon of oil to pot. Add ginger & garlic, sauté for 1 min over medium heat. Add chicken and cook for 8 mins until no longer pink.
2. Sauté Aromatics, Add Chicken
Season to preference with kosher salt and add fish sauce. Add rice and cook over medium heat for 2 minutes, stirring to allow flavors to meld.
3. Add Rice
Add chicken stock and stir constantly. It's important to keep a consistent stir for 10 minutes, as this will allow rice to release starch and thicken the stock.
4. Add Chicken Stock
Simmer for 20 mins. Adjust seasoning with kosher salt & fish sauce. Add pepper and stir. Remove pot from heat and cover. Let stand for 15 minutes to allow to thicken.
5. Continue to Simmer
Ladle into a bowl and top with chopped scallions, garlic chips, hardboiled egg and a squeeze of calamansi (or lemon juice).
