As the weather begins to cool, I immediately go for this buttermilk pumpkin waffles recipe. It’s so good and a household favorite! Even when it’s not fall, these seem to be go-to waffles, and once you try this recipe, you’ll see why.

Perfect Buttermilk Pumpkin Waffle Toppings

When is comes to toppings, I’m not one to load my waffles up a ton with different things. These two (along with a dollop of butter), tend to be my aboslute go-to toppings:

  • Whipped mascarpone If you’ve yet to try whipped mascarpone atop your french toast or waffles, this is the time for you to try it. Think whipped cream, but BETTER.
  • Pure Maple Syrup Is always a solid go-to. I use Grade A maple syrup which is amber in color and has a nice richness that complements the flavor of the waffles.
  • Dusting of Pumpkin Pie Spice Whenever I make these buttermilk pumpkin spice waffles or Pumpkin Spice French Toast, I always top it off with a light dusting of Pumpkin Pie Spice. It’s like the cherry on top and a little extra flavoring is always welcomed.

Mascarpone is a creamy Italian cheese, similar to American cream cheese, but with more butterfat and velvety texture. Mascarpone is a tasty addition to cheesacake or savory dishes like risotto.

In a food processor, add:

  • Heavy cream
  • Mascarpone
  • Sugar

How To Make Buttermilk Pumpkin Waffles

  1. Mix wet ingredients in a large bowl.
  2. Whisk dry ingredients in a separate bowl.
  3. Add dry to wet ingredients and fold until mixed. Do not overmix.
  4. Preheat waffle iron and brush both sides with melted butter.
  5. Add batter and cook until waffle iron indicates the waffle is “cooked”.
  6. Toppings Serve with a dollop of mascarpone, a dusting of pumpkin pie spice, pure maple syrup, and a spat of butter.

Can Extra Waffles Be Stored?

Yes! Want to store waffles for quick-and-easy, on-hand breakfast next time? Simply follow these steps:

  1. Place waffles on a cooling rack and allow to cool to room temperature.
  2. Stack waffles atop one another, placing a sheet of wax paper between each one.
  3. Place stack of waffles in a resealable bag, releasing air.
  4. Place bagged waffles in the freezer for up to 30 days.
  5. When ready to eat, place waffles in a toaster oven until fully defrosted and crunchy.

NOTE: Once stored in freezer, if you notice freezer burn on waffles, discard.

Tips and Tricks

  • Use butter to coat waffle maker: Some prefer using a neutral oil spray, but melted butter just tastes better.
  • Keep oven at 175°F to store cooked waffles: This will keep them warm as you finish making the rest.

Ingredients

Wet Ingredients

  • 2 eggs
  • ¾ cup pumpkin puree
  • 1½ cup buttermilk
  • 1 teaspoon vanilla extract
  • 3 tablespoons butter, melted

Dry Ingredients

  • 1 ¾ cup all-purpose flour
  • 1 teaspoon pumpkin spice
  • 3 tablespoons brown sugar
  • 1½ teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon kosher salt (I use Diamond Crystal)

For Waffle Maker

  • 2 tablespoons butter, melted for brushing

Whipped Mascarpone

  • ½ cup heavy whipping cream
  • ¼ cup mascarpone
  • 1 tablespoon sugar

Instructions

  • Preheat oven to 175°F and heat waffle iron.
  • In a large mixing bowl add wet ingredients and whisk until well combined.
  • In a separate medium mixing bowl, add dry ingredients and whisk.
  • Slowly pour dry ingredients into bowl with wet ingredients. Using a spatula, fold mixture until ingredients are well incorporated. Do not overmix. Batter will be slightly lumpy.
  • Brush waffle iron with melted butter. Pour batter into waffle mold (amount will vary depending on waffle maker model).
  • Cook until waffle maker indicates waffle is "cooked".
  • Remove and place on a plate. Keep warm in oven until ready to eat.
  • If making whipped mascarpone, see below. Otherwise top with butter, dusting of pumpkin pie spice, and maple syrup.

Optional – Whipped Mascarpone

  • In a food processor, add all ingredients and process on “High” until mixture turns into a whipped texture. Place in a bowl and leave in refrigerator, covered until ready to use.

  • Mix the egg mixture well otherwise you’ll have pieces of egg whites showing up on your slices. This recipe calls for incrementally adding ingredients.
  • Use butter and oil When cooking, use a mixture of avocado oil (neutral oil) spray and butter. This mixture will still lend the french toast the rich buttery taste, but also keep the butter from burning as it’s in the skillet.
  • Cut challah slices thick aim for 1¼ inch slices. Thin slices will cause your french toast to be flimsy and possible break apart.
  • Soak the bread thicker slices call for a good soak, giving it enough time for the egg mixture to penetrate layers of the bread. Soak each side for 4 minutes.
  • Preheat your pan Use a cast-iron skillet and be sure to preheat it, otherwise the egg mixture will create a small pool on the surface of the skillet.

Ingredients

  • 4 eggs
  • ¼ cup + 2 tablespoons pumpkin puree
  • 1½ tablespoon packed brown sugar
  • ¾ cup whole milk
  • ¼ cup heavy cream
  • 1½ teaspoon vanilla extract
  • 1 teaspoon pumpkin spice
  • ¼ teaspoon kosher salt (I use Diamond Crystal)
  • 1 loaf challah bread cut into 1¼ inch slices
  • 4 tablespoons butter
  • Avocado oil (or neutral oil) spray

Whipped Mascarpone

  • ½ cup heavy whipping cream
  • ¼ cup mascarpone
  • 1 tablespoon sugar

Instructions

  • In an 11×8 dish, add eggs and whisk until no noticeable egg whites are separated
  • Add pumpkin puree, pumpkin spice, salt, and brown sugar and whisk until well combined.
  • Next, add whole milk, heavy cream, and vanilla extract and whisk until combined.
  • Dip challah bread into egg mixture. Set a timer for 4 minutes, punching challah slices into mixture after 1 minute has passed.
  • After 4 minutes, flip and set timer again. Preheat cast iron skillet.
  • Once cast iron is hot, add ½ tablespoon butter and spray bottom or skillet with avocado oil spray. Once butter melts, carefully add french toast and cook for 4 minutes or until bottom is golden brown. Flip and repeat cooking time. 
  • Serve immediately with whipped mascarpone (optional, see below) a dusting of pumpkin pie spice and maple syrup. Optional – Whipped Mascarpone 1. In a food processor, add all ingredients and process on “High” until mixture turns into a whipped texture. Place in a bowl and leave in refrigerator, covered until ready to use.

  • Store in the refrigerator until ready to use.

Prefer a sweeter creamer?

This recipe calls for 4 tablespoons of maple syrup.If you prefer your pumpkin spice coffee creamer on the sweeter end, simply add 4 tablespoons that the recipe calls for, followed by increments of ½ tablespoon until desired sweetness is reached.

I use Grade A pure maple syrup for this recipe. The “grade” denotes the color and depth of flavor; the darker the syrup, the stronger the flavor. Grade A maple syrup is amber in color and rich in flavor and can be found at most local grocers.

Tips for making the best pumpkin spice creamer

  • Strain coffee creamer after cooling for smoother texture.
  • Use Grade A maple syrup for the perfect amount of richness.
  • Shake before each use as even after strained, there are residual spices that tend to settle at the bottom of the container.

How long is pumpkin pie spice blend good for?

One thing about spices is that over time, their flavor degrades in a pretty noticeable way. Whole spices tend to have a longer shelf life than ground spices. A good rule of thumb is to replace whole spices every 12 months and ground spices every 6 months.

While using old spices won’t ruin a dish, it will dull the flavor of foods, so it’s best to purchase spices that are less often used in smaller quantities, so as not to waste it.

This pumpkin pie spice recipe makes a total of 5 teaspoons. If you find yourself needing more, simply double the recipe, but the amount for one batch is small enough so that you’re less likely to waste it.
