Tools You’ll Need

  • ½-baking sheet, lined with parchment paper
  • Dutch Oven
  • Large Mixing Bowl
  • Medium Saucepan
  • Whisk

Ingredients You Will Need for Salted Caramel Popcorn

Popcorn

  • Popcorn kernels – Cooked on the stove and in a dutch oven.
  • Avocado oil – Use this or another neutral oil.

Caramel

  • Cold water – Used to help dissolve the granulated sugar.
  • Butter – Use unsalted to control the saltiness.
  • Sugar – Use granulated sugar.
  • Heavy Cream – Creates a delicious flavor and helps the caramel spread easily.
  • Kosher salt – I use Diamond Crystal brand.
  • Baking soda – This prevents the caramel from becoming too dense. Also, aids in making the caramel easy to spread.

How to Make Salted Caramel Popcorn Without Corn Syrup?

Although a lot of recipes call for adding corn syrup to making perfect caramel popcorn, this isn’t always necessary. While adding corn syrup aids in creating smooth caramel, you can still achieve this by leaving corn syrup out and leaving the sugar untouched until it turns amber in color.

Additionally, the heavy cream also aides in creating a smooth and spreadable caramel.

How To Make Salted Caramel Popcorn

Making salted caramel popcorn is easier than you think. You are just a few simple steps away from an unforgettable treat!

Popcorn

Preheat oven to 250°F.

Then add avocado oil to a dutch oven over medium-high heat. Add 2 kernels to the dutch oven, once they pop, remove and discard, then add remaining kernels. Cover with lid and (using oven mitts) carefully shake the pot so as to coat the kernels with oil.

Lower heat to medium and prop the lid on the pot to allow air to escape. Once the popping stops (2-3 seconds without hearing popping) pour popcorn into a mixing bowl. Discard any unpopped kernels.

Make the Salted Caramel

Add the sugar and water to a medium saucepan. Stir to combine, then cook over medium-high heat without stirring for 13–15 minutes, or until the mixture turns dark amber in color.

caramel sauce process

Turn off the heat and carefully pour in the heavy cream. Whisk until the mixture is smooth, then add the butter and salt and whisk until fully incorporated. Add baking soda and return pot to burner. Then stir over low heat. The mixture will foam but that is expected. Stir until one cohesive color forms.

Quickly pour caramel over popcorn and toss to combine. Then divide among prepared baking sheet and be sure to spread popcorn into a thin layer.

Baking Salted Caramel Popcorn

Bake in a preheated oven for 25 minutes then stir the mixture and repeat for another 20 minutes. Taste the mixture for texture and bake for an additional 15 minutes if you want it crunchy like traditional caramel popcorn.

Remove from oven and leave to cool. Finally, break them into pieces and serve.

Tips and Tricks

  • Watch the caramel closely. It can burn quickly and will be unusable.
  • Don’t stir the sugar. As the sugar transitions to caramel, do not stir as the mixture will crystalize.
  • The caramel hardens as it cools. So pour it quickly over the popcorn to ensure it coats them evenly.
  • Be careful when handling caramel. It is extremely hot so don’t be tempted to taste test with a finger while cooking it.

Variations

Have fun with some delicious add-ins. If you want to truly indulge, add your favorite candy or snack to the finished popcorn in order to make a popcorn mix. Some yummy ideas include:

  • Pretzels
  • Pecans
  • M&M’s
  • Chocolate drizzle

Storing Leftovers

After the popcorn has completely cooled, store leftovers in a resealable bag or sterilized containers for up to 2 weeks.

Frequently Asked Questions

Is caramel popcorn the same as toffee popcorn?

No. Toffee and caramel have different ingredients. Toffee popcorn is made with sugar (or light corn syrup) and butter. Whereas caramel popcorn is made with a combination of sugar (or dark corn syrup), milk (or cream), and water.

Can you make caramel popcorn without baking soda?

In short, yes, but you won’t have that signature crunch, which I feel, is a big reason why we love caramel popcorn! Baking soda reacts with the sugar to create tiny carbon dioxide bubbles yielding a soft light crunch and softer texture to the caramel.

Why is my caramel popcorn not crunchy?

Steam may have gotten trapped in the pot while you were making the popcorn. When this happens, the popcorn retains moisture. Prevent this by propping the lid open and allowing air to escape.

Do I have to bake salted caramel popcorn?

Although it isn’t totally necessary, baking is the best way to achieve crispy caramel popcorn. If you prefer chewy popcorn and plan to eat it all that night then go for it! Otherwise, it will be soggy after a few hours.

Baking the popcorn removes excess moisture so that it can stay crispy for weeks.

Wondering how to make those famous TikTok cinnamon rolls with heavy cream? You have come to the right place. Homemade classic sweet rolls that are pillowy soft and the perfect balance of sugar and spice and a traditional cinnamon roll icing–what could be better?

Say “goodbye” to dry, stale rolls and “hello” to this easy cinnamon roll hack that you’ll keep with you for luscious, ultra soft, and moist rolls: pour heavy cream over cinnamon rolls before baking.

What Does Heavy Cream do for Cinnamon Rolls?

Due to heavy cream’s high fat content, adding it to the rolls just before baking adds moisture and acts as a tenderizer to baked treats.

As the cinnamon rolls bake, it absorbs the heavy cream and the fat within the cream contributes to the irresistible softness of the roll.

Tools You’ll Need

  • Stand mixer
  • Kitchen instant thermometer
  • Ruler
  • 13×9 baking pan
  • Rolling Pin
  • Mesh Sieve

Ingredients You Will Need for Cinnamon Rolls with Heavy Cream

What’s great about this recipe is that it is made with simple ingredients, most of which you may already have:

Yeast

Proof yeast by adding it to water and sugar. After about 15 minutes, you will notice a a foamy top, which means the yeast has bloomed.

  • Active dry yeast â€“ This must be dissolved into a liquid before being added to the other ingredients.
  • Warm water â€“ The temperature should be between 110°-115°F.
  • Sugar â€“ Acts as fuel for the yeast and assists with the proofing process.

Cinnamon Rolls

  • All-purpose flour – Be sure to spoon and level the flour as you do not want to overpack the measuring cup.
  • Sugar – Added to sweeten the rolls.
  • Kosher salt – I use Diamond Crystal brand.
  • Salted butter – Melted, but temperature should not register over 110°F.
  • Eggs – You will need 1 large egg and 1 large egg yolk (for added richness), both at room temperature.
  • Whole milk warm – Warmed to 110°F.
  • Heavy cream – The trick to getting ULTRA MOIST rolls. This should be used at room temperature and is poured over the rolls after they have risen for the second time, just before baking.

Cinnamon-Sugar Filling

  • Salted butter – Use at room temperature.
  • Light brown sugar – Packed.
  • Cinnamon – A necessary ingredient for that sugar and spice flavor.

Cream Cheese Icing

  • Salted butter â€“ Use at room temperature.
  • Cream cheese – Make sure it is full-fat and room temperature for smooth mixing.
  • Pure vanilla extract – I use this Bourbon Pure Vanilla Extract.
  • Kosher salt –  I use Diamond Crystal brand.
  • Powdered sugar – Sift when adding this to the frosting mixture.

How to Make Cinnamon Rolls with Heavy Cream

A sweet labor of love, but it is truly worth it! This recipe calls for a decent amount of steps, but I’ve made it straightforward and easy to follow.

If you are new to baking cinnamon rolls with heavy cream, rest assured you are in good hands.

  1. Prepare the yeast: Add yeast, warm water, and sugar to a bowl and wait 10-15 minutes for the yeast to double in size AKA bloom.
  2. Mix dough. Mix the dry ingredients (just 2 cups of flour) together in a standing mixer bowl. Add the yeast mixture and wet ingredients to that bowl. Use the knead hook to turn the mixer on low and slowly add the rest of the flour. Once ingredients form into a dough, let it sit for 5 minutes, to allow flour to absorb wet ingredients.
  3. Knead the dough. Knead for 7 minutes under speed 4 setting. Form it into one large ball.
  4. First rise. Add dough to a greased mixing bowl. Coat with plastic wrap then place it somewhere warm for 1½-2 hours, or until the dough has doubled in size. Then remove the plastic wrap and punch down the dough to remove air.
  5. Add cinnamon sugar mixture. Roll dough out on a well-floured surface with a rolling pin. Spread the cinnamon sugar mixture evenly over the dough, leaving the border clear of the mixture.
  6. Roll. Into a log and pinch the seam to keep the log sealed. Trim and discard uneven pieces.
  7. Slice. Cut the log into 12 pieces using unflavored dental floss.
  8. Pour Heavy Cream. Just before and bake for 26-30 minutes.
  9. Slather with Icing and Serve. When rolls come right out of the oven. Enjoy warm!

Tips and Tricks for the Best Cinnamon Rolls with Heavy Cream

  • Use warm ingredients. As it aids in the proofing process.
  • Spoon and level your flour. Using an appropriate amount of flour is important as you don’t want to add end up with heavy dough due to adding too much flour.
  • Temperature is very important. If your water, milk, or butter are too hot or too cold, the cinnamon rolls will be affected. If the ingredients are too hot, it will kill the yeast. And if they’re too cold, the yeast won’t activate.
  • Don’t skip the second rise. Allowing the dough to rise twice results in a lighter, chewy texture. You definitely want your cinnamon rolls to have those qualities.
  • Dough should have a tacky, not sticky texture. If the dough is still sticky, refer to the remaining ½ cup of flour and add in increments of 1 tablespoon at a time until the dough is no longer sticky.
  • You’ve kneaded enough when the dough is smooth. It should also spring back when you poke it.
  • Be patient. Keep in mind that dough is rich so it may take some time to rise. If your oven has a proof setting, use that because a warm environment will encourage rising.
  • Place foil over the rolls. If rolls begin to brown too quickly when baking, lightly place a piece of foil wrap on top.

Making Cinnamon Rolls Ahead of Time

Prepare cinnamon rolls ahead of time. There’s nothing like a morning filled with the scent of freshly baked goodness. What’s great about making them ahead is that all you’ll have to do the morning of is allow time for a rise, pop them in the oven and spread icing on top.

Can cinnamon rolls be made ahead of time?

Yes. Just before the second rise (stop at step 8), cover them in the pan and refrigerate for up to 12 hours before baking. Then let them rise at room temperature, which will take 1-2 hours. Proceed with pouring heavy cream and bake.

Frequently Asked Questions

Do you put the icing on cinnamon rolls before baking?

Place icing on baked cinnamon rolls. Otherwise, the dough will absorb the frosting as it bakes.

Why are my cinnamon rolls not fluffy?

If your rolls did not puff up while baking, you may have added too much flour to the dough. Be sure to spoon and level flour into a measuring cup for more accurate measuring.

Can I use dark brown sugar instead of light brown sugar in cinnamon rolls?

Yes, you can use either. Dark brown sugar has a deep, sweet flavor. In contrast, light brown sugar has a more subtle sweetness.

How to Reheat Leftovers

If you need to reheat, simply microwave in 10-second intervals.

You can find variations of chocolate lava cake on plenty of restaurant menus but now you can make it from the comfort of home! It’s no wonder they’re so popular; they are soft and cakey on the outside with warm, decadent chocolate oozing from the middle. Grab some ramekins because we’re about to make this molten lava cake recipe from scratch!

Why This Recipe Works

  • Simple – It’s super easy to make. With just a few simple ingredients, these chocolate lava cakes are ready in 30 minutes!
  • Crowd Pleaser – This recipe makes enough for four servings. Impress your friends and family with a dessert that looks like it took loads of effort! Lava cake brings that “wow” factor.

plated molten lava cake

Tools You’ll Need

  • Ramekins
  • Stand mixer

Ingredients You Will Need for Chocolate Lava Cake

  • Chocolate – I used bittersweet chocolate bars with 70% cacao. When using chocolate for this recipe go for 70-74% cacao (Ghirardelli and Guittard are high-quality and great options). Using quality chocolate will result in silky, smooth chocolate which is what you need for that irresistible, melty center.
  • Butter – Unsalted butter is used for this recipe both for the batter and ramekins so the cakes don’t stick.
  • Sugar – For sweetness, of course!
  • Eggs – You will need 2 large eggs as well as 2 large egg yolks. Make sure they are at room temperature for easier mixing.
  • Pure vanilla extract – Use the good stuff. I keep pure vanilla extract on hand.
  • All-purpose flour –  We want the cake to have structure but not too much. Too much flour will make your center firm and it’s not lava cake without the chocolate lava! Make sure it is spooned and leveled for accurate measuring.

Garnish

  • Powdered sugar – for dusting
  • Shaved chocolate – 70% dark chocolate is preferred

Homemade Whipped Cream

  • Heavy cream
  • Pure vanilla extract
  • Powdered sugar

How To Make Chocolate Lava Cake

You are just steps away from decadent chocolate goodness. There are no complicated steps in this straightforward recipe! Let’s get into it!

  1. Preheat the oven to 425°F.
  2. Melt the chocolate and butter in a heatproof bowl over a pot of nearly boiling water. (The water should not reach the bowl.) Continuously stir until the chocolate is melted.
  3. Add eggs, yolks, salt, sugar, and pure vanilla extract in a separate bowl and whip with a stand mixer or hand mixer until the mixture is pale and foam-like.
  4. Combine the egg mixture with the melted chocolate then add flour. Gently fold the ingredients until they are well combined.
  5. Pour the mixture into the ramekins and bake for 10-12 mins or until the edges are puffed and the center is soft.
  6. Let them cool for 6 mins before flipping them onto plates. Dust with powdered sugar and top with homemade whipped cream and shaved chocolate (optional). Enjoy warm!

Homemade Whipped Cream

  1. Add heavy cream, vanilla, and powdered sugar to a stand mixer bowl and whisk on high (using a whisk attachment) just until the mixture turns light and whipped. About 1-2 minutes. Top on lava cake just before serving.
  2. Store leftover whipped cream in a refrigerator-safe container for up to 3 days.

Tips and Tricks

  • Make sure the oven is preheated before placing the ramekins inside. The heat will ensure the cake’s exterior bakes faster than the center.
  • Oven times may vary. Some ovens run warmer than others, so be sure to keep an eye on the cakes starting at the 9 minute mark.
  • If you don’t have ramekins, use a muffin pan instead. With this chocolate lava cake recipe, you should be able to make about a dozen in a muffin tin. Since they are smaller, they will cook a little faster. Check them at the 5-minute mark.
  • Keep an eye on the chocolate lava cakes because they will bake fast. When you take them out, the edges should be firm but the center will be jiggly. Gently tap the center of the cake. If you have batter on your finger, let it bake for another minute or two.

Variations

  • Really want to indulge? Serve hot chocolate lava cake with a side of vanilla ice cream, top with salted caramel, and don’t skip on the shaved chocolate!
  • Serving this for Valentine’s Day, an anniversary, or a romantic evening? Garnish with berries to elevate this dessert and make it even more special.

  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon kosher salt
  • 2½ tablespoons all-purpose flour, spooned and leveled, plus more for ramekins

Garnish

  • Powdered sugar, for dusting
  • Shaved chocolate, 70% dark chocolate

Homemade Whipped Cream

  • â…” cup heavy cream
  • 1¼ teaspoons pure vanilla extract
  • 2½ tablespoons powdered sugar

Instructions

  • Preheat oven to 425°F
  • Fill a small pot with about 1 inch of water and bring to a near boil. Add the chocolate and 1 stick of butter to a heatproof bowl and set atop the pot of water, making sure the water is not touching the bottom of the bowl. Stir with a spatula until chocolate is completely melted, 1½-2 minutes.
  • In a separate bowl add eggs, yolks, salt, sugar, and pure vanilla extract. Whip with a stand mixer or hand mixer until the mixture is pale and foam-like.
  • Pour egg mixture into melted chocolate, then add flour. Use a spatula to gently fold over the mixture until the ingredients are well combined.
  • Evenly distribute mixture among 4 ramekins and bake for 10-12 mins or until edges are puffed and center is soft.
  • Leave to cool for 6 mins before carefully flipping onto a plate. Dust with powdered sugar and top with homemade whipped cream and shaved chocolate (optional). Enjoy warm.

Homemade Whipped Cream

  • Add heavy cream, vanilla, and powdered sugar to a stand mixer bowl and whisk on high (using whisk attachment) just until the mixture turns light and whipped. About 1-2 minutes. Top on lava cake just before serving.
  • Store leftover whipped cream in a refrigerator-safe container for up to 3 days.

How to Shave Chocolate

  • Turn chocolate on its side and peel down lengthwise, creating small and thin pieces. Top over lava cake just before serving.

What Type of Thai Tea Mix Should You Use

When making Thai milk tea creme brulee, I use this Thai tea mix and have found to really like the flavor.

It’s quite aromatic, the hue is the familiar orange of Thai tea, and produces a flavor akin to what you get at most Thai restaurants. Other brands I’ve used tend to not taste exactly like the tea we all know and love or have too much sugar in the mix.

How to Make Banana Creme Brulee

This easy creme brulee recipe only requires a few steps:

  1. Preheat oven to 325°F and move oven rack to the middle.
  2. In a saucepan, add cream, pure vanilla extract and Thai tea mix. Whisk to combine and heat over a medium-low flame for a few minutes, just until you begin to see steam rise from the mixture. Remove from heat, set aside.
  3. Meanwhile, add yolks, salt, and sugar to a mixing bowl. Whisk until light and creamy. Set aside
  4. Place cheesecloth into a double-rod strainer and over a mixing bowl. Pour in cream mixture, then squeeze cheesecloth. Discard tea leaves.
  5. Temper the eggs by stirring in one quarter of the cream into the egg mixture and whisk. Repeat until fully combined. Skim and discard any foam from the top.
  6. Place four 8-ounce shallow ramekins into a baking dish then pour in mixture. Add boiling water halfway up the sides of the ramekins. Bake for 35-40 minutes, checking at the 30-minute mark. Centers should be set, having a wobble when you tap the sides.
  7. Cool completely, then refrigerate for at least 3 hours.
  8. When ready to serve, top each custard with a teaspoon of sugar. Carefully torch in a circular motion, 4 inches away from the top, until sugar melts and turns an amber color.

Tips and Tricks

  • Temper the eggs. Even though the cream mixture is scalding hot, it is important to incrementally add it to the eggs and sugar so as to not cook the eggs. When added too quickly or if the cream mixture is too hot, you can end up with scrambled eggs.
  • Use quality ingredients. Since this creme brulee recipe only calls for a few ingredients, go for organic heavy cream and pure vanilla extract. Trust me, you will taste the difference.
  • Skim the foam. After whisking the eggs and creamy together, Skim the foam from the top of the mixture.
  • Pop the bubbles. After pouring into ramekins, bubbles will sometimes rise to the top. Be sure to pop that–I always keep a toothpick handy–as it can leave an unappealing appliance after cooking.
  • Custard keeps for 3 days. If you want to make this ahead of time, simply bake the custard, cool, then refrigerate for up to 3 days before torching the sugary top.

Frequently Asked Questions

Can I brulee the top and then refrigerate?

Wait to brulee the top until ready to eat. Placing creme brulee in the refrigerator with the hard topping will cause it to soften and you won’t have that signature crack.

How do I know if the creme brûlées are done baking?

The sides should be set and the middle should have a slight jiggle to them when you tap the side of the ramekin. If the middle is quite wobbly, cook for a little longer.

What does tempering mean?

Tempering refers to incrementally combining eggs with warm liquid–in this case, Thai tea mix–to create a stable base for the custard. It’s important that the liquid is not too hot, as it will scramble or cook the eggs, rather warm to the touch.

What’s the purpose of the water bath?

The water bath helps to cook the custard in constant (but gentle) heat.

What kind of sugar should I use for the top?

Cane sugar works perfectly fine.

Are all ramekins the same?

No. They will vary in size–typically in ounces–and some are designed with higher or lower walls. For this recipe, I use shallow 8-ounce ramekins. If you opt for ramekins with higher sides, you may need to adjust your cooking time.

Do cooking times vary?

Thai Tea Creme Brûlée should be set after baking for 35-40 minutes in the oven. Keep in mind that not all ovens are alike and some may cook hotter than others. If you know that your oven tends to cook hotter, check the creme brûlée for a set wobble after 30 minutes and adjust the cooking time, if needed.

NOTES

Cooking Suggestion Times
Keep in mind that not ovens will cook the same, so cooking times will vary. While my creme brulee is complete at about 45 minutes, some have remarked that 35 minutes was enough time for them.
My suggestion is to check on the creme cups at the 35 minute mark and check every 5 minutes until creme is completely set with a jiggle when tapped to ensure not to overcook.
