How To Make Whipped Cottage Cheese

This recipe is easy to follow. Cook down the fruits, sugar, salt, and syrup, until a delicious compote is formed. Then allow it cool before using it as a topping for your whipped cottage cheese.

Nectarine-Peach Compote

  1. Add chopped nectarine, peach, sugar, maple syrup, lemon zest and juice, and salt to a medium saucepan over medium-high heat and stir to combine ingredients. Once the mixture begins to simmer, continue to stir and drop the heat to medium. Cook for 15 minutes stirring every couple of minutes.
  2. Lightly mash the fruit and continue to cook for 10 minutes or until the mixture begins to thicken. At the last 5-minute mark, add the butter and stir until melted. Remove the pan from heat and leave to cool completely.

Once the compote is cool, add all the ingredients for the whipped cottage cheese to a food processor and whip until smooth, light, and fluffy–about 2-3 minutes.
