Ingredients You Will Need for Teriyaki Chicken Bowl

Who doesn’t keep chicken, rice, and broccoli stocked in their kitchen? And if you make Asian cuisine often, then you more than likely have most of the ingredients needed for the teriyaki sauce.

  • Chicken thighs – Cut into 2-inch pieces. Use boneless, skinless chicken thighs.
  • Avocado oil – Cook the chicken in this oil. You can use olive oil as a substitute.

Marinade

  • Soy sauce – This adds an umami-rich flavor. Use low-sodium soy sauce if you’re concerned about salt intake.
  • Mirin – This sweet rice wine is a staple in Japanese cooking. It has a sweet and tangy taste. Use white wine vinegar or rice vinegar as a substitute.
  • Sake – This is a key ingredient in traditional Japanese teriyaki sauce. Sake has a mild, slightly sweet, and fruity flavor that can complement the sweetness of sugar and the saltiness of soy sauce in teriyaki sauce.
  • Freshly cracked black pepper – When you crack whole peppercorns just before using them, you preserve the essential oils that give black pepper its intense flavor and aroma.
  • Ginger – Finely chop fresh ginger.
  • Garlic cloves – Grated.
  • Brown sugar – This imparts a subtle sweet taste.

To Thicken Sauce

Make a cornstarch slurry using cornstarch and water in order to thicken the teriyaki sauce.

  • Broccoli – Steam fresh broccoli.
  • Jasmine rice – This short-grain rice is perfectly starchy and clings to the sauce so well.
  • Toasted sesame seeds – Add for garnish as a nice, toasted flavor with texture.

How To Make a Teriyaki Chicken Bowl

Teriyaki chicken is incredibly easy to make. Marinate the chicken in advance, then sauté it up for a delicious meal!

  1. Add all marinade ingredients to a bowl and mix until well combined. Add sliced chicken then mix until chicken is coated. Cover with plastic wrap and place in the refrigerator to marinate for 2 hours. 30 minutes before cooking (can be 1½ hours into the marinating time) remove chicken from the refrigerator to allow chicken to come to temp.

2. Heat sauté pan over medium heat along with 1 tablespoon of avocado oil. While pan is heating up, carefully strain chicken from marinade, reserving the marinade in a separate bowl (see process photo). Add chicken and cook on medium heat for 3-4 minutes, then flip and continue to cook until cooked through, about another 2-3 minutes.

3. Meanwhile, add water and cornstarch and stir to combine and make a slurry. Set aside.

4. Transfer chicken to a bowl and cover to keep warm. Add marinade to the sauté pan and bring to a boil. Cook for 3 minutes then lower to a simmer for 4-5 minutes or until liquid has slightly reduced. Add slurry then increase heat to medium. Cook for 2 minutes, continuously stirring then add chicken back and cook until chicken is warmed through.

5. Serve atop rice and a side of steamed broccoli. Garnish teriyaki chicken with toasted sesame seeds.

Tips and Tricks

  • Dice the chicken into even bite-sized pieces. This allows the meat to cook evenly.
  • Don’t skip the marinade. Marinating the chicken is key to infusing it with the teriyaki flavor. Marinate the chicken for at least 30 minutes or, ideally, a few hours in the refrigerator. This allows the flavors to penetrate the meat.
  • Preheat the pan. Preheat the large skillet over medium-high heat for a nice sear that helps to caramelize the chicken.
