Give traditional potato salad a spicy upgrade with this recipe. I swap mayo, mustard, and pickle relish for a homemade Caesar dressing with a kick from Calabrian chilis. And instead of the usual hard-boiled eggs and vinegar, this recipe introduces anchovies and fresh lemon juice for a tangy, savory base.

The contrast between the creamy potatoes and the crunchy focaccia breadcrumbs makes each bite better than your mom’s potato salad. Yeah, I said it!

Tools You’ll Need

Ingredients You Will Need for Spicy Potato Salad

Here is a breakdown of what you will need to make this homemade potato salad recipe. For actual measurements, see the recipe card at the end of this post.

Potato Salad Dressing

  • Egg yolk – Using a fresh egg yolk is crucial for creating a rich and creamy base for the Caesar dressing. It helps to emulsify the oils, giving the dressing its smooth texture.
  • Fresh garlic – I always smash the garlic to release its full flavor before finely chopping it into the dressing. This step ensures that every bite has a hint of that robust garlic taste.
  • Anchovies – Draining the oil from the anchovies prevents the dressing from becoming too oily. Their salty, umami flavor is essential for an authentic Caesar taste.
  • Dijon mustard – Dijon mustard adds a tangy, slightly spicy kick that complements the other flavors in the dressing. It’s a must-have for balancing the richness of the egg yolk and oil.
  • Lemon – The zest and juice of a lemon add brightness and acidity, cutting through the richness of the dressing. Reserving the second half ensures you have enough juice to adjust the flavor later.
  • Oil – Combining quality olive oil and avocado oil gives the dressing a perfect balance of flavor. The olive oil adds a fruity note, while the avocado oil provides a smooth, buttery texture.
  • Parmigiano Reggiano – Freshly grated Parmigiano Reggiano melts beautifully into the dressing, adding a nutty, savory depth. Pre-shredded cheese won’t give you the same creamy consistency.
  • Worcestershire sauce – Just a dash of Worcestershire sauce adds a complex, savory undertone that enhances the overall flavor profile of the dressing.
  • Seasoning – Freshly cracked black pepper adds a subtle heat, while Diamond Crystal kosher salt helps to enhance all the other flavors without being overly salty.
  • Calabrian chilis – These chilis add a spicy kick and a unique flavor that sets this dressing apart from traditional Caesar dressings.

Focaccia Breadcrumbs

  • Focaccia breadcrumbs – Using finely crumbled focaccia breadcrumbs adds a delicious crunch and a hint of herby flavor to the salad. They soak up the butter and garlic beautifully.
  • Salted butter – Salted butter adds richness and helps to toast the breadcrumbs to a perfect golden brown. It also enhances the garlic flavor.
  • Fresh garlic clove – Microplaning the garlic ensures it blends seamlessly into the breadcrumbs, providing a more even and intense garlic flavor.
  • Kosher salt – A pinch of kosher salt in the breadcrumbs enhances their flavor without overpowering the other ingredients in the salad.
  • Lemon zest – This adds a fresh, zesty note to the breadcrumbs, balancing the richness of the butter and the garlic.

Potatoes

  • Baby yellow potatoes – Baby yellow potatoes are perfect for this salad because they have a creamy texture and a slightly sweet flavor. They hold their shape well after boiling.
  • Chives – Fresh chives add a mild onion flavor that complements the other ingredients. Dividing them ensures some are mixed into the salad, while the rest are used as a garnish for a burst of color and flavor.
  • Avocado oil – Use oil to lightly coat the potatoes. It helps the dressing adhere better.
  • Kosher salt – Add salt to taste.

The Best Potatoes for Potato Salad

  • Baby Yellow Potatoes These potatoes have a creamy texture and a slightly sweet flavor that works well in potato salads. Their small size means they cook quickly and evenly, making them a convenient choice.
  • Yukon Gold Potatoes – I like these buttery potatoes. They are the perfect balance between firm and tender.
  • Red Potatoes – These are great because they keep their shape well due to their waxy texture. Plus, there’s no need to peel them, which adds a touch of color and saves time.
  • Russet Potatoes – Russets are a good choice if you prefer a starchy, soft, and creamy potato salad. They break down more during cooking, creating a rich and smooth consistency.

How To Make the Best Potato Salad

Below is a summary of how to make potato salad. For a complete and detailed list of steps, see the recipe card at the end of this post.

Caesar Dressing

  1. Place anchovies, garlic, and a pinch of salt on a cutting board and finely chop as possible, essentially, until a paste forms. Transfer the paste to a medium-sized bowl, then add 1 teaspoon of lemon juice (from the reserved lemon) this will help cut the sharpness of the garlic. Set aside for five minutes.
  2. Add the egg yolk, lemon zest, juice of ½ a lemon, dijon mustard, and a generous pinch of salt. Whisk together.
  3. Combine avocado and olive oil in a measuring cup. While whisking, slowly add oil until it is fully emulsified.Do not stop whisking as you add the oil. Once fully emulsified, add freshly grated parmigiano reggiano, black pepper, worcestershire sauce, and calabrian chilis. Whisk to combine and adjust seasoning with salt and pepper, if needed.

Focaccia Breadcrumbs

  1. In a skillet over medium heat, add butter. Once melted, lower heat then add grated garlic and cook until fragrant, about a minute (do not brown garlic.) Add breadcrumbs and cook for 2-3 minutes or until toasted and crispy. Stir in salt and lemon zest then set aside.

Potatoes

  1. Boil generously salted water in a medium pot with a lid. Once water comes to a boil, add potatoes and cook for 12 minutes or until tender when poked with a fork.
  2. Drain potatoes then set aside to cool for 6 minutes. Carefully slice in half then transfer to a mixing bowl.
  3. Add salt, avocado oil, and 3 teaspoons of chives and mix. Add ½ cup spicy caesar dressing plus more to taste and mix. Transfer to a serving plate and top with desired amount of breadcrumbs and remaining chives.

Tips and Tricks

  • Use fresh, high-quality ingredients. Fresh ingredients like garlic, lemon, and Parmigiano Reggiano will make a noticeable difference in flavor and texture.
  • Emulsify the dressing properly. Whisk continuously while adding the oils to ensure the dressing is smooth and well-emulsified, which prevents it from separating.
  • Cook the potatoes until just tender. Boil the potatoes until they are fork-tender but not falling apart/overcooked to maintain a good texture in the salad.
  • Cool the potatoes before dressing. Let the boiled potatoes cool for about six minutes before mixing them with the dressing to prevent them from becoming mushy.
  • Toast the breadcrumbs until crispy. Toasting the focaccia breadcrumbs in butter until they are crispy adds a nice crunch to the salad.
  • Season to taste. Adjust the seasoning of the dressing with salt and freshly cracked black pepper to suit your preference, ensuring a well-balanced flavor.

What to Serve with Potato Salad

Serve potato salad with grilled chicken, BBQ ribs, or a juicy steak, as a bold and creamy complement to these mains. It also enhances the flavors of burgers and grilled fish, adding a zesty twist to the meal. For a lighter option, serve it alongside roasted vegetables for a balanced meal.

Frequently Asked Questions

Can you freeze potato salad?

I do not recommend freezing potato salad because the texture of the potatoes and the dressing becomes watery and grainy once thawed.

What is classic potato salad made of?

Classic potato salad typically includes boiled potatoes, mayonnaise, mustard, pickle relish, hard-boiled eggs, and a splash of vinegar. It is usually seasoned with salt, pepper, and sometimes celery or onions for added crunch.

What not to do when making potato salad?

Avoid overcooking the potatoes. This can make them mushy and cause the salad to lose its texture. Additionally, don’t skimp on seasoning; properly seasoned potatoes and dressing are key to a flavorful salad.

How long does it take to boil potatoes for potato salad?

Boiling potatoes for potato salad typically takes about 12 to 15 minutes. The exact time depends on the size and type of potatoes; they should be fork-tender but not falling apart. It’s important to start with cold, salted water and bring it to a boil for even cooking.

Is it better to boil potatoes whole or cut up for potato salad?

In general, it is better to boil potatoes whole to prevent them from absorbing too much water and becoming mushy. However, if you have large potatoes, cutting them into halves or quarters can help them cook more evenly and quickly.
