Tools You’ll Need

Ingredients You Will Need for Coconut Rice
Here is a breakdown of what you will need to make coconut rice in the rice cooker. For actual measurements, see the recipe card at the end of this post.
- Avocado oil – Used to gently sweat the aromatics, it adds richness without competing with the coconut flavor.
- Aromatics (garlic, shallot, ginger, pandan leaves) – These work together to build a fragrant base that adds depth and warmth to the rice without overpowering the coconut milk.
- Jasmine rice – Its naturally aromatic grains cook up soft and fluffy, making it well suited for this recipe.
- Chicken stock – Adds savory depth and keeps the rice from tasting flat or overly rich.
- Coconut milk – Brings a subtle sweetness and creamy richness while still allowing the grains to stay light.
- Kosher salt – Sharpens the overall flavor and balances the richness of the coconut milk.

How To Make Coconut Rice in a Rice Cooker
Below is a summary of how to make coconut rice. For a complete and detailed list of steps, see the recipe card at the end of this post.
Rinsing the Rice
Rinse the jasmine rice thoroughly under cold water until the water runs mostly clear, then drain well. This removes excess surface starch and helps the rice cook up fluffy instead of gummy. Leave the rinsed rice in the rice cooker pot and set it aside.
Preparing the Aromatics
Heat the avocado oil in a sauté pan over medium-high heat, then add the shallot, garlic, and ginger. Cook for about 3 minutes, just until the shallots soften, taking care not to brown the mixture. Add the pandan leaves and cook for another 30 seconds until fragrant.

Cooking Coconut Rice
Measure out the chicken stock, then remove two tablespoons and set it aside to account for the moisture and oil from the aromatics. Add the cooked aromatics, remaining chicken stock, coconut milk, and salt to the rice, then stir until well combined. Place the pot in the rice cooker, set it to cook, and let it run according to the manufacturer’s settings.

Fluffing and Serving
Once the rice is done, discard the pandan leaves, garlic slices, and ginger coins. Fluff the rice gently with a fork just before serving to keep the grains light and separate.

Tips for the Best Coconut Rice
- Rinse the rice well. Removing excess starch helps the rice cook up fluffy instead of gummy, which is especially important when using coconut milk.
- Do not brown the aromatics. The goal is to gently soften the shallot, garlic, and ginger so they become fragrant without developing color.
- Adjust the liquid slightly. Removing two tablespoons of chicken stock accounts for the oil and moisture released from the aromatics and prevents soggy rice.
- Use full fat canned coconut milk. It adds richness and subtle sweetness while still allowing the grains to stay light and separate.
- Let the rice cooker do its job. Once everything is added and the cooker is set, avoid opening the lid, as trapped steam is key to evenly cooked rice.
- Fluff just before serving. Gently fluffing the rice at the end helps release steam and keeps the texture soft and even.

What to Serve With Coconut Rice
- Chicken Adobo – The garlicky, tangy sauce from the adobo soaks beautifully into coconut rice, creating a deeply satisfying and well-rounded plate.
- Steak Bowl – The savory, peppery butter sauce pairs especially well with coconut rice, which soaks up the flavors while keeping the bowl balanced and satisfying.
- Bang Bang Shrimp – Crispy shrimp tossed in a creamy, spicy-sweet sauce pair well with coconut rice, which helps balance the heat and soak up the sauce.
- Pot Roast – The rich, savory depth of the pot roast goes so well with coconut rice, which absorbs the sauce.
- Atchara (Filipino Pickles) – Crisp, tangy pickled vegetables add contrast and brightness, bringing acidity that sharpens the flavors on the plate without overwhelming the coconut rice.

Frequently Asked Questions
What is the ratio of rice to water for coconut rice?
The ratio is similar to regular rice, with about 1 cup of rice to 1½–2 cups of liquid, depending on the rice and method. When using coconut milk, part of the liquid is usually replaced with water or stock to keep the rice fluffy and prevent it from becoming too heavy.
Can I use coconut milk in my rice cooker instead of water?
Yes, coconut milk can be used in a rice cooker, either on its own or combined with water or stock. Using a blend helps balance richness and allows the rice cooker to produce evenly cooked, fluffy rice without scorching.
Is coconut rice healthier than regular rice?
Coconut rice is not necessarily healthier than regular rice, but it does offer a different nutritional profile. Coconut milk adds fats and flavor, which can make the dish more satisfying, while plain rice remains lower in fat and calories overall.
