  • When you squeeze them, they should feel firm with a slight give but not too soft. You never want to use mushy avocados.
  • The stem is easy to remove.

  • Ripe avocados – The most common type of avocado is the Hass avocado, also known as the California avocado. It’s rich, creamy, and great for guacamole.

  • Red onion – Finely diced onions add a subtle crunch and a pop of color.
  • Jalapeño – For those who like a bit of heat, finely chopped jalapeño is the perfect addition. Seeded if you prefer a milder kick, this pepper adds a spicy zing that keeps things interesting without overpowering the other flavors.

How Do You Make Guacamole?

  1. Slice the avocados in half, remove the pit, and scoop into a mixing bowl.
  2. Mash avocados in a bowl, making it as chunky or smooth as you’d like, then add remaining ingredients and only 1 teaspoon of kosher salt to start. Mix well.

3. Adjust taste with more lime, lemon juice, and kosher salt, if necessary. Garnish with more finely chopped cilantro.

4. Serve with tortilla chips and enjoy immediately.

Tips for Making Guacamole

  • Make it chunky. When you mash the avocados, don’t puree them. It’s best to leave some texture. Otherwise, it’s more like a sauce than a dip.
  • Are your avocados underripe? The best method is to plan ahead and get your avocados 1-2 days in advance. Store ripe avocados in the fridge and use them within 48 hours as this will stall further ripening.
  • How to ripen an avocado? Simple place an avocado in a thin paper bag with a banana and store in a cool, dark place. Bananas produce ethylene gas that acts as a plant hormone to help fruits ripen.
  • Serve immediately or chill. Guacamole is best enjoyed fresh. If you have to make it in advance, cover it tightly with saran wrap and consume by the next day.

  • Tomatoes Some guacamole recipes include tomatoes for juicy flavor. Use grape tomatoes or Roma tomatoes because they’re not too watery (which could alter the consistency of the guacamole).
  • Onions and other aromatics Traditional guacamole uses yellow onions but I prefer red for the color and sharp flavor. Either works! I’ve tried guacamole with leeks, scallions, and freshly grated garlic, also great options.
  • Spicy I think the jalapeños add a good spicy kick but if you want to amplify the heat, swap with serrano peppers.

How to Keep Guacamole Green

Nothing beats freshly made guacamole but if you need to make it in advance, I have a tip: Add the avocado pits to the bowl of guacamole to prevent browning. The reasoning behind this is simple. The oxygen isn’t reaching the guacamole because the pits act as a barrier.

Additionally, the lime and lemon juice aid a great deal in delaying oxidation, or browning.

Limiting the air exposure slows down the oxidizing process which helps keep your guacamole fresh for longer. Squeezing a bit of extra lime juice over it also keeps it green.

Cover it tightly with plastic wrap, and refrigerate the guacamole until you’re ready to serve it. Consume it within 24 hours.
