  • Thick-cut bacon – Precooked and cut into ¼-inch pieces. Soak excess grease before adding it to the recipe.
  • Large eggs – Use high-quality eggs; organic and cage-free preferably.
  • Full-fat cottage cheese – This adds texture and more protein.
  • Gruyère cheese – Packed and freshly shredded.
  • Half and half – Add this for a richer taste and creamier consistency. Use heavy cream or regular milk as an alternative.

How to Make Egg Bites the Perfect Texture

If you are wondering how to make egg bites fluffy, smooth, and deliciously creamy, follow these tips:

  • Add cornstarch to the egg mixture in order to prevent coagulation of the protein and/or curdling, giving the egg bites a smooth, creamy-like texture.
  • Blend the egg mixture. This adds pockets of air which contributes to the overall fluffiness.
  • Use steam. By filling a baking pan with hot water and placing it beneath the rack holding the egg bites, steam can penetrate the egg mixture, adding moisture for a creamier consistency,
  • Cook the egg bites on low heat. This results in a silky smooth finish.
  • Do not overcook them. These take about 25 minutes to bake but the timing may be affected by the ingredients added. So stay close to observe them as they cook. Otherwise, they may become tough and rubbery.

How To Make Egg Bites

After preparing hot water for the steam bath and blending the ingredients, simply pour the eggs into the muffin tins and bake until they are fluffy clouds of rich, eggy goodness.

Preheat Oven and Boil Water for Steam Bath

Set one oven rack on the lowest level and another rack set in the middle.

Place the 9 x 13 baking pan in the oven. Preheat oven to 300°F. In a medium-sized pot, bring 8 cups of water to a boil.

Prepare Bacon & Add Hot Water to Baking Pan

Cook bacon in a small pan until crispy. Transfer to a paper towel-lined bowl and set aside.

Carefully pour warm hot into the baking pan. The steam will help with the cooking process, yielding moist eggs.

Blend Egg Mixture

Add eggs, cheese, cottage cheese, hot sauce, garlic powder, salt, pepper, cornstarch, and half and half to a blender. Blend on high until smooth.

Add Blended Egg Mixture to Muffin Pan & Top with Bacon Bits

Generously spray muffin tin with avocado oil spray. Divide egg mixture among the 6 muffin tins then top with bacon, gently nudging some of the pieces towards the middle.

Bake Bacon and Gruyère Egg Bites

Bake for 22-26 minutes or until the middle is cooked through and the sides are pulling away from the tin. The egg bites may rise out of the muffin tin and that’s okay.

Remove from the oven and allow to cool for a few minutes before serving.

Recipe Variations

  • Eggs. Make egg white bites to save calories.
  • Vegetarian. Simply omit the bacon in order to make this recipe meatless.
  • Protein. Instead of bacon, add diced ham, sausage crumbles, or shredded turkey. This recipe would be a perfect way to use up leftovers after a hearty meal.
  • Veggies. For added flavor and nutrients, try adding tomatoes, kale, spinach, green onions, or chopped broccoli.
  • Cheese. Gruyère can be replaced with either feta, sharp cheddar, or parmesan. Instead of cottage cheese, try sour cream or ricotta.

Leftovers

After the bacon and gruyère egg bites have completely cooled, store them in an airtight container in the fridge for up to 3 days. For longer storage, flash-freeze them. Once they have cooled, place them on a baking sheet in the freezer for about one hour then transfer them to an airtight container. Frozen egg bites last for up to 3 months.

Reheat them directly from the freezer, microwaving them for about 1-2 minutes. From the refrigerator, warm them up in the microwave for about 30 seconds.
