How To Make French Onion Soup Dip

Learn how to carmelize onions in just a few simple steps; it’s a labor of love and the heart of this recipe.

Caramelized Onions

  1. Over medium heat, add the olive oil and butter. Once butter melts, add the onions and stir every few minutes. Do not rush this process; caramelizing onions takes 1 hour and 15 minutes to 1 hour and 30 minutes. As you cook the onions, take care to not let the mixture brown too quickly, rather it should slowly brown over time. If the mixture dries out, add 1 tablespoon of water at a time and adjust heat, if necessary. After 15 minutes, add bay leaves and continue to stir. After 20 minutes, add thyme, garlic, salt, and pepper. Continue to cook until deeply brown and caramelized. Allow a brown glaze to slowly develop on the bottom of the pot. This is known as fond, which is key for flavor.
  2. Stir in the brandy and dry vermouth, scraping the brown bits (fond) from the pot and cook until most of the liquid evaporates, about 4 minutes.
  3. Add worcestershire sauce, dijon, stir to combine, then add beef broth. Bring to simmer then continue to cook until most of the liquid evaporates.

Place oven racks in the center. Preheat oven to 375°F.

Cream Base

Add cream cheese, greek yogurt, mayonnaise, and kosher salt to a medium-size mixing bowl and beat with a hand mixer until smooth and creamy. Transfer caramelized onion mixture to the cream bowl then add cheese. Mix until well combined.

  1. Place slices of baguette on a baking sheet and top with olive oil. Bake for 5-10 minutes or until toasted and lightly browned. Remove from the oven and set aside.

2. Transfer dip to a 9″ cast-iron skillet then top with remaining cheese. Bake uncovered for 15 minutes then change oven temp to BROIL for 3-5 minutes to get a perfectly browned topping (make sure bread has been removed). Remove French onion soup dip from the oven, leave to cool for 3 minutes. Garnish with chives and thyme. Finally, enjoy!
