How To Make Dutch Oven Pot Roast

Sear the Roast

I take the chuck roast out of the refrigerator about 45 minutes before cooking so it can come closer to room temperature. I season it generously on all sides, then heat avocado oil in my dutch oven over medium-high heat and sear the roast until deeply browned, about five minutes per side. Once browned, I transfer it to a plate and loosely cover it.

Build the Braising Base

I reduce the oil in the pot to about three tablespoons, then add the ginger, leek, and scallions and let them cook for about one minute until fragrant.

I pour in the sake and let it simmer for a few minutes to loosen any browned bits from the bottom of the pot. In a small bowl, I stir a portion of the chicken stock with the miso until smooth.

Braise in the Oven

I add the remaining chicken stock, soy sauce, brown sugar, garlic, miso mixture, orange peel, and peppercorns to the pot and bring everything to a boil. I return the roast to the dutch oven, cover it with the lid, and transfer it to a 325°F oven. Then I let it slowly braise for two and a half to three hours, flipping the roast every hour, until fork-tender.

Make the Mint Orange-Ginger Sauce

While the roast cooks, I stir the mint, avocado oil, grated ginger, orange juice, fish sauce, and lime juice together in a small bowl. I set it aside so the flavors can come together.

Finish and Serve

I remove the lid and return the pot to the oven so the top of the roast can brown and the sauce can reduce slightly. After resting the roast for about ten minutes, I discard the aromatics, spoon the sauce over the meat, and finish with the mint orange-ginger sauce before serving over steamed or coconut rice.

At 325°F, a 2 to 2½ pound chuck roast takes about two and a half to three hours to become fork-tender when braised in a dutch oven. I flip the roast every hour to help it cook evenly and stay moist. You will know it is ready when it pulls apart easily with a fork.

Ingredients

Chuck Roast

  • pounds chuck roast
  • kosher salt, Diamond Crystal
  • 3 tablespoons avocado oil
  • cup white miso
  • ½ cup sake
  • 8 cloves garlic, smashed
  • 1 medium leek, halved light green and white part only
  • 1 bunch scallions, dark green and white parts only
  • 2 inches ginger, sliced coins
  • 2 cups chicken stock, unsalted
  • 3 tablespoons soy sauce
  • ½ cup brown sugar, packed
  • 3 inch piece orange peel
  • ¼ teaspoon whole black peppercorns

Mint Orange-Ginger Sauce

  • ½ cup mint, packed, rough chopped
  • 3 tablespoons avocado oil
  • 1 teaspoon ginger, finely grated
  • 1 clove garlic, finely grated
  • tablespoons fresh orange juice, or fresh tangerine juice (preferred)
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon granulated sugar

Instructions

  • Remove chuck roast from refrigerator 45 minutes before cooking.
  • Generously season roast on all sides. Heat dutch oven medium-high heat. Add 3 tablespoons of avocado oil. Add roast and brown on all sides, should take about 5 minutes on each side. Transfer roast to a plate and cover.
  • Preheat oven to 325°F.
  • Remove all but 3 tablespoons of oil. If needed, add more avocado oil. Add ginger, leek, and scallions and cook for 1 minute.
  • Add sake and cook for 3 minutes. Stir ½ cup chicken stock and miso paste in a small bowl until a loose paste forms.
  • Add remaining chicken stock, soy sauce, brown sugar, garlic, miso mixture, orange peel, and peppercorns. Bring to a boil then lower to a simmer again then return short ribs to the dutch oven. Bring the mixture to a boil, cover with a lid, then transfer to the oven.
  • Slow braise in the oven for 2½ – 3 hours (flipping every hour), until roast is fork-tender, checking at the 2 hour mark.
  • Remove the lid and continue to cook until the top of the roast deeply browns and the sauce reduces a bit. Remove from the oven, allow to cool rest for 10 minutes. Remove and discard aromatics. Spoon out as much of the top layer of fat as possible.
    This roast is especially good over coconut rice with both sauces spooned generously on top, though simple steamed rice will soak up the flavor just as well.

  • Add all ingredients to a bowl and stir to combine. Set aside to allow flavors to marry.
