  • 2 cups cooked jasmine rice
  • tablespoons avocado oil
  • bunches scallions, chopped
  • teaspoons ginger, finely grated
  • kosher salt, to taste, Diamond Crystal

Instructions

  • Rinse and cooking rice according to rice cooker's manufacturer's instructions. Add all yuzu mayo ingredients to a bowl, mix to combine and set aside.
  • While chicken is roasting in the oven, make the scallion ginger rice.
  • Heat a medium pan over medium heat. Once hot, add avocado oil and lower heat to medium low. Add scallions and keep a continuous stir, making sure to not the scallions brown. Continue cooking and stirring for 8-10 minutes until scallions are deep green in color and the oil has a slight green hue to it.
  • Season to taste with salt then turn heat off and continue to cook for 30 seconds. Add ginger and stir continuously for 1 minute or until ginger is fragrant.
  • Add cooked rice and press the mixture into the rice, using the back of the cooking spoon to infuse rice with the aromatics and oil. Season to taste with more salt, if needed.
  • Serve rice in a bowl along with sliced honey miso chicken. Finish with desired amount of yuzu mayo. Enjoy!
