There are four components to this cheesy garlic bread recipe; the spreadable roasted garlic, easy garlic butter, the three cheese blend, and chives for garnish.

Roasted Garlic

  • Garlic –  Roasting garlic enhances its natural sweetness and mellows its sharpness, resulting in a rich, caramelized flavor and creamy texture.
  • Kosher salt – Use Diamond Crystal to taste.

Garlic Butter

  • Kerrygold Chive and Onion Butter Blend –  Use room temperature butter so its easy to spread.
  • Parmigiano reggiano cheese – Freshly grated, this cheese adds a deep savory flavor to the butter.
  • Chives –  Finely chopped chives have a mild, onion-like flavor with a subtle hint of garlic. They have a fresh, delicate taste.

  • French Bread Loaf – Halved length-wise. It’s ideal for making garlic bread because of its soft, airy center and thin, crispy crust. It’s porous enough to soak up the garlic butter mixture, creating a perfect balance of crunch on the outside and a chewy, flavorful inside.
  • Cheese – I use a blend of freshly shredded low-moisture mozzarella cheese, freshly shredded Monterrey jack cheese, and freshly grated parmigiano reggiano cheese.

Roasted Garlic

  1. Preheat oven to 400°F.
  2. Place garlic in foil or small oven-proof dish with lid and pour olive oil and salt. Cover with lid or wrap tightly with foil, making sure garlic head is facing up. Roast in the oven for 40 minutes or until garlic is tender.

Garlic Butter

Place all garlic butter ingredients in a bowl. Once roasted garlic is cool enough to touch, add it, squeezing from the bottom until all cloves are in the mixture. Use a fork to mash and mix well. Set aside.

Cheesy Garlic Bread

  1. Place halved french bread on a prepared baking sheet. Spread the garlic butter on both sides of the halves. Bake in the oven for 5-6 minutes or until sides of the bread are slightly crunchy. remove from the oven, then increase oven temperature to 450°F.

2. Top bread with mozarella and monterrey jack (I use mix the two then top) then sprinkle with ¼ cup of parmesan. Bake for an additional 5 minutes, until cheese is perfectly melted, then change oven temp to BROIL. Bake for an additional 1-3 minutes or until cheese begins to slightly brown. Keep a close eye on the bread and to not leave the oven for these last few minutes.

3. Remove from the oven and top with chives. Cut into desired size pieces. Enjoy!
