I’m so excited to share this recipe with you because what makes this potato wedges recipe so special is the ginger scallion sauce the wedges are covered it. It’s insanely delicious! While the potato wedges are cooking, a simple ginger scallion oil sauce is prepared and finished when the wedges are ready to pop out of the air fryer–perfect timing!

I decided to take my roasted potato game up a notch and add a little something I typically enjoy over rice, chicken, fried eggs–literally everything: ginger scallion sauce (or ginger scallion oi)l. This salty, slightly onion-y condiment that is typically accompanied with Cantonese poached chicken, is also great with fish and guaranteed to convert any ginger hater.

What Type of Potato Should You Use?
My go-to potato air fryer potato wedges is yukon gold. This has to be my favorite varietal of potatoes for its delicious, buttery mouthfeel and smooth texture.

How Long Do You Need to Air Fry Potato Wedges?
For one pound of wedges that are single layered in my 5.8 quart air fryer basket, the total cook time is 28 minutes at 380°F. Keep in mind this time may vary depending on the make, model, watts, and size of your air fryer.
Tips and Tricks
- Soak potatoes for 10-15 minutes to remove excess starch, this also helps with a crispier exterior.
- Ginger scallion sauce yields roughly one cup, but you will only need 2-3 tablespoons. Use remaining oil on stir-fry vegetables, roasted chicken, noodles. The possibilities are endless!

Air Fryer Potato Wedges
Ingredients
- 1 pound yukon gold potatoes
- Kosher salt, Diamond Crystal brand
- Garlic powder
- Avocado oil spray
Ginger Scallion Sauce
- ¼ cup scallions, finely chopped
- 2 tablespoons ginger, finely chopped
- 2 tablespoons garlic, finely chopped
- ½ teaspoon kosher salt
- ½ cup avocado oil
Instructions
- Preheat air fryer at 380°F.
- Cut potatoes into quarters. Soak in water for 10-15 minutes.
- Drain water and pat potatoes dry with a paper towel. Spray potatoes with avocado oil spray and season generously with kosher salt and garlic powder.
- Add potatoes to air fryer basket. Select "French Fries" setting, adjust time to 28 minutes, 380°F and press "Start". Shake air fryer basket at the 14 minute mark. Start working on the scallion oil while the potatoes are cooking.
- Add chopped scallions, ginger, garlic, and kosher salt to a medium-sized mixing bowl.Heat oil in a saucepan over medium-high heat for 3-5 minutes. If you have a kitchen thermometer handy, you want the temperature of the oil to reach 350ºF. If you don't have a thermometer, you'll want to achieve a noticeably thin, shimmery oil.
- Carefully pour the oil into the bowl containing the ingredients. You’ll notice a good amount of sizzling as the oil comes into contact with the ginger-scallion ingredients, that’s expected.
- Leave the oil to cool for to room temperature (20 mins).Once you remove potatoes from the air fryer, transfer to a mixing bowl. Add 2-3 tbsps of ginger scallion oil to the bowl and mix well. Season with kosher salt, if needed, Serve immediately.
- Place remaining ginger scallion sauce in a sterile jar. Sauce will keep in refrigerator for 2 weeks.
